Aglio e Olio Recipe (Easy Vegan Garlic Pasta)

Aglio e olio means garlic and oil in Italian. It is a classic pasta made with garlic, olive oil, parsley and chili pepper. With Pastacraft Aglio e Olio Sauce Starter, you can make a vegan version at home in about 20 minutes. It serves 4 to 6.

Ingredients

  • 1 lb pasta (spaghetti or linguine work well)
  • 1 pouch Pastacraft Aglio e Olio Sauce Starter
  • ½ cup olive oil, plus a drizzle for finishing
  • 1 cup starchy pasta water
  • Optional: plant-based Parmesan or toasted breadcrumbs to keep it vegan, or grated Parmesan if you are not

Instructions

  1. Cook the pasta in water until al dente. Save 1 cup of pasta water, then drain.
  2. In a pan over medium heat, add the olive oil, the cooked pasta and the sauce starter. Sauté for 30 seconds. Do not let the garlic burn.
  3. Add ½ cup of pasta water and toss until the sauce turns silky.
  4. Finish with a drizzle of olive oil and your garnish of choice.

Tips and variations

  • Add shrimp, chicken, broccoli, spinach, cherry tomatoes, white beans or mushrooms.
  • For more heat, add red pepper flakes.
  • Keep the garlic golden, not brown, to avoid bitterness.

Pastacraft Aglio e Olio is vegan. Skip the Parmesan or use a plant-based one for a fully vegan dish.
