  • Cacio e Pepe: peas, asparagus, mushrooms, lemon zest, crispy pancetta, chicken or a jammy egg.
  • Miso Butter: mushrooms, spinach, bok choy, scallions, salmon, shrimp or a jammy egg.
  • Aglio e Olio: shrimp, chicken, broccoli, spinach, cherry tomatoes, white beans or mushrooms.

Tips for better pasta sauce

  • Save more pasta water than you think you need. The starch is what makes the sauce silky.
  • Cook pasta al dente so it finishes in the sauce.
  • Finish with a small pat of butter or a drizzle of olive oil for gloss.
